MasterChef Australia Season 14 Episode 55: Round One

In the first round, Billie is called upon to present her dish of six oysters. She had prepared chicken fat dressing with apple celery granita, topped with crispy chicken. The judges instantly like her dish and express it as a complex flavour where you get the texture of crispy chicken then granita and at last the salty umami taste of the oyster.

After that Daniel is asked to present his dish which is grilled smoky oysters with smoky soy sauce and coconut vinaigrette. He gets complimented by the judges for his growth throughout the competition as he now cooks like a chef and any chef would be proud of this oyster dish.

Followed by Alvin’s brown butter oysters with gin and lemongrass vinaigrette, which gets complimented for the interesting dressing but the flavours are lost and brown butter might not have been the best option with oysters. Then Sarah presented her spiced Kilpatrick which makes Judge Andy feel too hot but is commended for an interesting take on the dish.

Lastly, Keyma brings cevichito de ostras which is applauded for the beautiful presentation but the combination with passion fruit doesn’t do it any favour. Therefore, the judges quickly decide that Daniel and Sarah passed the first round and join Julie on the sides. Whereas Billie, Alvin and Keyma have to fight for the last two spots in the top 5.

MasterChef Australia Season 14 Episode 55: Round Two

For the second round, they are given 75 minutes and have to present a dish where the main focus has to be the oysters. Keyma hardly passed through the first round due to her inexperience with oysters and was feeling very overwhelmed under the judges calmed her down to believe in herself and her cooking.

Again, Billie is the first one to present her oyster custard Kilpatrick to the judges. She was concerned that the custard might be too firm but when judges dug their spoons through the dish, it glided smoothly. They liked how silky glistening texture the custard had added with the underlying flavour of mushrooms.

Secondly, Alvin brought his hawker-style oyster omelette with chilli vinegar, which was already the judge’s favourite dish, but he wasn’t able to control the heat of the wok in the open windy environment and thus, was not satisfied with his end result. And rightly so, due to the weak heat, the omelette lost the crispy texture it would otherwise have. But his chilli vinegar was ready to be bottled and sold.

Lastly, after much nervousness, Keyma presented oyster pisca andina and the judges were instantly in awe of the flavourful dish. They would have given a round of applause if everyone was there and really liked the velvet-rich texture of the sauce with tender and plump oysters. It proved that even under stress and inexperience if you believe in your cooking you can jump over any hurdle.
